About the grapes

Bacchus

Bacchus

Bacchus brings elderflower and citrus to our English whites. At Dillions, it shines in two styles: fresh and vibrant in stainless steel, or richer and creamier with barrel fermentation and time in older French oak.

How it's made: English White Wine

English white wine takes more than one form. Fresh, dry, aromatic styles are often fermented in stainless steel to preserve the fruit, while barrel-fermented wines explore a richer, more textured expression. Bacchus can show both sides, from elderflower and bright citrus to creamy roundness and subtle oak influence.

England’s cool climate gives the grapes bright acidity and expressive aromatics. The winemaker’s task is to decide how best to work with that character: preserving its freshness, building texture, or finding a balance between the two.
